To Taste: Spring Spinach Salad with Chicken
April 14, 2008
Celebrate spring with a fresh salad filled with good-for-you vegetables and protein filled substance.
Right now, as we’re lightening our diets, preparing for summers filled with activity and challenge, it’s great to have a quick and easy meal that doesn’t scrimp on taste or nutrition.
Try this spinach salad with chicken (one of my favorites) and add, or take away the things you don’t like, to suit your taste. Keep in mind you can adjust recipes like this to include what’s in season or fresh at your own local market (or farmer’s market’s - my fave).
Couple it with a nice chunk of ciabatta bread dipped in olive oil, and you have a lovely meal that celebrates just how good you take care of yourself.

Oatmeal Chocolate Chip Cookie Cheat
January 16, 2008
I have a secret. And it’s deadly.
There are these cookies that my family loves. My sister, Kim, gave me her super secret recipe and boy is it good! And, from beginning to end – like when you get your mixing bowl out of the cupboard to taking them fresh from the oven – is only 20 minutes tops.
When you are in a pinch, need to look like super mom, super girlfriend, or super Martha, you just can’t beat these packages of cookie mix for a sure fire way into the hearts and stomachs of many.
I know. SHOCK. GASP!
For all you purists that love to measure, sift and spoon, this may not be your idea of a great idea, but when time is of the essence, these will pass off as the best homemade cookies ever. (No offense to your made-from-scratch baking. Honest.)
Simply add a stick of butter and an egg with the Oatmeal Chocolate Chip Cookie Mix, and our secret weapon is to add about a handful of chopped walnuts. I tried for months to get them to come out soft and chewy without the nuts, but, it just didn’t work. Besides, walnuts have good omega 3 fatty acids in them and adds more texture and oil to the recipe. I’m telling ya…it really makes a moist and chewy cookie.
Of course, here is the recipe you can bake from scratch, but, make sure you have a couple of packages of cookie mix in the pantry. It’s a cheat that can’t be beat.
Black Eyed Pea Jambalaya
January 1, 2008
Being from the South, I grew up eating black-eyed peas, cornbread, and collard greens courtesy of my own Granny Clampett - my Grandmother. Supposedly, these things brought you good luck and fortune all through the year. Read more
